Just wanna say dive in! His catalogue is littered with gems so it is hard for me to recommend only one or two albums. Is certainly safe to go with what previous people have suggested.
Of the measly 15 albums I have, my favourites are:
Ready For The House (the first one - perhaps start here)
Blue Corpse
On The Way (I'm Ready is possibly my fav Jandek song)
Chair Beside A Window
Glasgow Sunday

It is a very exciting time for you my friend! I love discovering a new artist and finding all this cool stuff you have not heard before.
Have fun sir!

I think its funny people think someone is insane because they decide to think outside the box and create unique or thought provoking music. Anyway my suggestion would be to get the first release Ready for the House to start with. Honestly I would just order them in order of the list. But another suggestion after ready for the house is 'blue corpse' its his most Accessible. Blue Corpse is one of the only releases with standard tuned guitar, and more conventional song structure.
